Seine Ausbildung zum Facharzt für Chirurgie und plastische Chirurgie hat er an der Ludwigmaximilians Universität München abgeschlossen. Daraufhin konnte er seine Abteilung für plastisch-rekonstruktive Chirurgie im Klinikum Starnberg eröffnen. Dr. med. Joachim von Finckenstein engagiert sich außerhalb der Arbeit auch sehr viel und war zum Beispiel von 2007 bis 2011 Präsident der Deutschen Gesellschaft für ästhetisch-plastische Chirurgie. Was ihn aber besonders abhebt, ist, dass er selber zwei verschiedene Operationsmethoden entwickelt hat.
