He then went into General Surgery training, then on to Otolaryngology Head & Neck Surgery. During residency training he completed Postgraduate Diploma in Surgical Anatomy and Master of Public Health & Tropical Medicine. After completing his Otolaryngology Head & Neck Surgery Training he completed 3 subspecialty Fellowships in 3 countries.

Dr Levi majors in airway reconstruction, Head & Neck tumour resection, congenital airway head & neck conditions, salivary gland disease, sleep surgery and complex paediatric surgery. Yet he still enjoys the work of general ENT such as sinus surgery, vocal cord surgery and ear surgery.

He is the Director of Melbourne ENT Airway Clinic, a Consultant Surgeon at St.Vincent's Hospital & The Royal Children's Hospital. He is a member of the Vascular Anomalies Clinic, Drooling Control Clinic, Complex Airway Clinic, Tracheostomy Multidisciplinary Clinic, Laryngology Clinic, Solid Tumour MDT, Head & Neck Cancer MDT. He is a Surgical Supervisor, Executive of Australia New Zealand Paediatric Otorhinolaryngology Society,  Senior Lecturer at The University of Melbourne, Fellow at Murdoch Children's Research Institute, member of Royal Australasian College of Surgeons' Academy of Surgical Educators, Laryngology Society Australia and Australia New Zealand Head & Neck Cancer Society.
