Univ.Prof. Dr. Dejaco absolvierte sein Medizinstudium an der Universität Wien und promovierte dort im Jahr 1993. Er ist Mitglied in renommierten Fachgesellschaften, darunter die Österreichische Gesellschaft für Gastroenterologie & Hepatologie (ÖGGH), die Österreichische Gesellschaft für Psychosomatik in der Inneren Medizin und die American Gastroenterological Association (AGA).
