PD Dr. med. Josef Stoiber schloss sein Medizinstudium in Innsbruck (Österreich) und Freiburg (Deutschland) ab. Seine augenärztliche Ausbildung absolvierte er an der Augenklinik Salzburg. Anschließend spezialisierte er sich auf die Bereiche Katarakt, Hornhauttransplantation und refraktive Chirurgie. Dr. med. Stoiber forschte von 2002 bis 2003 am renommierten Bascom Palmer Eye Institute in Miami. Im Jahr 2005 habilitierte er sich an der Paracelsus Medizinischen Privatuniversität Salzburg und erhielt den akademischen Titel „Privatdozent“.
